This easy, 4-ingredient vanilla ice cream is so creamy and refreshing on a hot August day.
I made this recipe out of necessity. Because you know, we NEED ice cream when temperatures remain in the high 90s for several days. And, also because I had a gallon of milk that needed to be used before its expiration date this weekend. So, this was the perfect opportunity to use it and this recipe did NOT disappoint!
One thing I’ve learned since living on this property, 35 minutes from town, is that ice cream may not be something we buy from the grocery store because it may not survive the commute home. But, with a recipe this simple, why would I need to buy a carton for $6, when I can make it for the same price without all the additives or concern for listeria?
The four ingredients you need are:
- Milk
- Heavy Cream
- Vanilla Extract (imitation works just as well too)
- Sugar
- Salt *optional
Just add all your ingredients to a blender or a mixing bowl until the sugar dissolves completely. Once dissolved, use a spatula to transfer the batter to your ice cream maker. Follow the manufacturer’s directions to freeze this batter. Once it’s reached a solid consistency, transfer to a freezer safe container and allow it to set up in the freezer for 1-3 hours. Or as long as you can possible wait, I know it’ll be difficult!
Once it’s firmed up, shovel into a bowl and enjoy with your favorite cookie or toppings (granola, nuts, fruit etc. etc.). OR, if you’re in the cool of winter, top your favorite pie or Hot Chocolate with this easy vanilla ice cream. It will not disappoint.

Method
- Blend all ingredients together in your blender or in a mixing bowl, until all the sugar is dissolved.
- Pour your batter into your ice cream machine, and follow your manufacturer's directions to prepare your ice cream.
- Once your ice cream has a really thick consistency, quickly pour into a freezer proof container and allow it to firm up to 1-3 hours.
- Serve with your favorite cookie or toppings.
