This easy vanilla ice cream recipe is so simple to follow. Your kids will enjoy helping, you'll enjoy the easy clean up, and your spouse will enjoy licking their bowl clean. Enjoy it plain as vanilla, OR dress it up with your favorite cookie / toppings like crumbled Oreos, fresh blackberries or put it on top of a peach cobbler!   Either way, you'll love this recipe. This easy, 4-ingredient vanilla ice cream is so creamy and refreshing on a hot August day. 

I made this recipe out of necessity. Because you know, we NEED ice cream when temperatures remain in the high 90s for several days. And, also because I had a gallon of milk that needed to be used before its expiration date this weekend. So, this was the perfect opportunity to use it and this recipe did NOT disappoint! 

One thing I’ve learned since living on this property, 35 minutes from town, is that ice cream may not be something we buy from the grocery store because it may not survive the commute home. But, with a recipe this simple, why would I need to buy a carton for $6, when I can make it for the same price without all the additives or concern for listeria?

The four ingredients you need are:

  • Milk
  • Heavy Cream
  • Vanilla Extract (imitation works just as well too)
  • Sugar
  • Salt *optional 

Just add all your ingredients to a blender or a mixing bowl until the sugar dissolves completely.   Once dissolved, use a spatula to transfer the batter  to your ice cream maker.  Follow the manufacturer’s directions to freeze this batter. Once it’s reached a solid consistency, transfer to a freezer safe container and allow it to set up in the freezer for 1-3 hours. Or as long as you can possible wait, I know it’ll be difficult! 

Once it’s firmed up, shovel into a bowl and enjoy with your favorite cookie or toppings (granola, nuts, fruit etc. etc.). OR, if you’re in the cool of winter, top your favorite pie or Hot Chocolate with this easy vanilla ice cream. It will not disappoint.

Ingredients
  

  • 2 Cups Heavy Whipping Cream
  • 2 Cups Whole Milk
  • 1 Cup Sugar You can use less if you like, but remember since ice cream is so cold, the extra sugar helps keep it sweet.
  • 3 Tbsp Vanilla Extract I have used imitation and it's just as tasty
  • 1 Pinch Salt *Optional

Equipment

  • 1 Blender or mixing bowl Use this to combine your ingredients
  • 1 Rubber Spatula To scoop every ounce of liquid into your ice cream machine
  • 1 Ice Cream Machine I used a Cuisinart 2-Quart Ice Cream maker and it's perfect

Method
 

  1. Blend all ingredients together in your blender or in a mixing bowl, until all the sugar is dissolved.

  2. Pour your batter into your ice cream machine, and follow your manufacturer's directions to prepare your ice cream.
  3. Once your ice cream has a really thick consistency, quickly pour into a freezer proof container and allow it to firm up to 1-3 hours.

  4. Serve with your favorite cookie or toppings.

Notes

This simple vanilla ice cream recipe will have you licking the inside of your bowl on these hot August nights. If you're trying it in the winter, I recommend topping your favorite pie with it for a decadent dessert OR plop a scoop in your favorite Hot Cocoa recipe.
